To really understand how time influences the texture, strength and complexity of a cheese you need to do a vertical tasting –tasting the same cheese at 3 different ages. But to know who makes the best cheese or how the terroir changes a cheese you need to do a horizontal tasting. No, you don’t need to do it lying down, you just need to join Juliet Harbutt, lecturer at the University of Gastronomic Science in Italy, for a tasting of some exceptional, lesser known artisan NZ cheeses. To underline these differences Juliet has been working with Mac & The Team at Advintage to come up with some great wines that really bring out the subtle nuances. Discover what difference a day, week or year makes to cheese and see how, with different wines, the influence of terroir is underlined. For anyone who simply loves cheese and wine.
